1passionflower tea bag or 1 teaspoon dried passionflower
4-5fresh lemon balm leavesor 1/4 teaspoon dried
4ozhot water
1tablespoonhoney
1ozfresh lemon juice
4ozsparkling water

Fresh lavender sprig for garnish
Instructions
Steep lavender, passionflower, and lemon balm in hot water for 5 minutes. Use a small pot or heat-safe jar.
Strain the tea through a fine mesh strainer into a measuring cup. Press gently to extract all liquid.
Add honey while tea is still warm and stir until dissolved. Let cool to room temperature, about 5 minutes.
Add lemon juice to the cooled tea mixture.
Fill a coupe or wine glass with ice. Pour the tea mixture over the ice.
Top with sparkling water and stir gently. Garnish with a fresh lavender sprig.
Notes
The tea concentrate can be made ahead and refrigerated for up to 3 days. Add sparkling water when ready to serve. Use culinary lavender only, as decorative varieties may be treated with pesticides.
